Gluten Free Flour

I want to make a cake for a friend with coeliacs, can anyone recommend a good gluten free flour please? Thx!

  • Doves Farm gluten free is good, and often the easiest to get hold of too. Don't know what type of cake you're planning, but naturally moist ones such as banana bread, fruit cake or lemon drizzle seem to work quite well for me.

    I use Doves Farm Gluten & Wheat Free white self-raising flour blend. You will find it in the 'free from' section in the bigger supermarkets.

    I have made fairy cakes from the flour which have turned out lovely. I have also made 2 or 3 sandwich sponge cakes but have had issues with the sponges not raising much. This may be my cooker (hasn't been the same since we had the element replaced) or due to my opening the oven too early to have a peek or perhaps because they need a spot of baking powder.

    Despite this, my 'testers' say that they can't tell the difference between my GF cakes or normal cakes and they don't last long, so obviously edible, just a bit well flat looking.
