scottish bread recipe plse?

Hi all,
My neighbour comes from Glasgow and recently gave me a loaf she brought back to try, as she knows i make bread.
Different taste to locally and she hasn't found anything like it in England!
Does anyone have a recipe for this? I believe it uses lard, but not sure. Btw, it was a tall loaf, dark on top and a bit lighter on the base.

  • Its almost impossible to make decent plain bried at home, unfortunately. But it is fabulous. Especially the "outsider".

  • Most people squeeze the bread to ascertain how fresh it is. ME? Not me. I squeeze the plain loaf to ascertain how THICK the outsider is and the thicker the ootie the more likely it's going in my basket. Would you believe that some people even throw the outsider in the bin? I know!!
