Juice from stewed rhubarb.....what to do with it?

:confused: Ok so i know most of us are avidly following the chicken and leek cookdown thread but after stewing some rhubarb this evening I have realised I added too much water and now have a pint of juice strained off it.

I cant think of a thing to do with it, but it looks too nice to just spill down the sink...i expect most of the nutrients from the rhubarb are in it.

PS Will we end up on the loo quite a bit if we just drink it??:o :confused:

  • I add a jelly to the juice (usually orange) and it make a delicious pudding! Am much too mean to throw the juice away ;)
  • I've a fab recipe using strained rhubarb juice (but you also need some of the stewed rhubarb).

    Whip up some double cream and add about 1/2 can coconut milk, fold in the stewed rhubarb and serve in glass tumblers, refridgerate to set and before serving drizzle some of the pink juice and crumble a bit of flake on top. It tastes delicious and looks really posh.:j

    Exactly what I was going to suggest :D I usually use a sachet of gelatine (one sachet sets a pint of liquid), and I put orange juice in too.

    I'm much idler, I just use a pkt of supermarket jelly (9p a pkt stuff):D
