Holiday recipe search???

A few years ago I went on a holiday to Jamaica and while there had a very moist cake made from sweet potatoes, called Sweet Potato Pone.

Before we left I found a recipe book that had it in to bring home, unfortunately when I made it myself it beared no resemblance to what I had eaten.

I wonder and I know this could be a long shot or not the right place to post, but has anyone else tried this, the cake was quite sweet but a little grainy, like there was coconut in it, dark in colour and proportionally not dissimilar to a malt loaf.

Heres hoping there is anyone else out there that can help.

    Here's one:
    • 2 cups finely grated raw sweet potatoes
    • 1 cup evaporated milk
    • 2 eggs, well beaten
    • 3/4 cup dark corn syrup
    • 1/4 cup melted butter
    • 1 teaspoon grated lemon rind
    • 2 teaspoons lemon juice
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 1/2 cup brown sugar
    Mix the grated sweet potatoes with the milk to prevent discoloring. Combine the ingredients in order given. Pour into a greased shallow baking pan. Bake in a 350° oven for 30 minutes; stir with a fork. Bake 15 minutes longer or until browned and crusty on top.
    Serves 6.
