Can someone tell me how to make home made ravioli??

You need to make pasta. Make two sheets. Place one sheet on the worktop and then dot it with your filling. Have the dots of filling (about a teaspoon size) lined up in rows & columns and leave a generous space in between them. Place the second sheet of pasta on top and gently press the top sheet to the bottom, in the gaps between the filling.
Then take a pizza cutter or a sharp knife and cut in between the filling, across & down. You should end up with little square parcels. Take each parcel and seal the edges together by firmly pressing them - you can do this with the tines of a fork.
Allow the parcels to rest for 30 minutes then drop them into boiling water to cook for about 5-7 minutes.

Hi, I recently acquired a pasta maker from Freecycle. We love making tagliatelli, but want to move up to ravioli.
Any recipes for filling? We're planning to start with spinach and ricotta, mixed together and seasoned with nutmeg.
