Generally squashes can be eaten in the same recipes as each other so I thought it would be useful to merge the threads. Here's a link to details of other squashes:

I wasn't aware that spagetti squash had such a different appearance once cooked though. So my apologies if this has confused anyone. All the same, I think we get quite a few threads on squashes so it might be useful to keep the answers together.May all your dots fall silently to the ground.0 -
Thank you both. its going in for a nice roasting as we speak with some cumin etc. We have a lamb & chick pea casserolly thing for dinner so should be excellent.....another happy bug.........sorry,blogger embracing the simple life0

Fry off an onion, add 1lb cubed butternut squash and 2 cubed carrots, a good tespoon of ground ginger and a good amount of cinnamon, a tin of chopped tomatoes and 150ml vegetable stock and simmer until the veggies are cooked.
Serve with a big heap of cous cous.
Cheap and cheerful Moroccan stew.0 -

Butternut Squash and Parmesan Risotto is delicious, my baby daughter thinks it's wonderful too.
Skin the butternut squash and chop into chunks.
Cook the squash in boiling water until soft. Drain, (reserve cooking water for stock) add some butter and seasoning then mash.
Put the pan with the mashed squash back on the heat, add the risotto rice and stir for a couple of minutes.
Start to add the hot stock ladle by ladle. Stir after adding each ladle of stock and wait until most of the liquid is absorbed before adding the next.
Keep going for about 15 mins then add grated parmesan. Give it another couple of mins then serve.0 -
