Spaghetti Squash, Butternut squash and other squashes

In order to improve on my dismal cooking skills I've decided to order a veggie box which was delivered today. This is not the cheapest way to buy vegetables but I thought, hey, it's healthy and I've got to cook it now! There are some lovely things in there and I am looking forward to my first 'proper' meal tomorrow.
Now my question: What can I do with the Spaghetti Squash??? :confused:
I've found out online how to cook it but cannot find anything easy (I really am a lousy cook) to turn it into a meal.

Any suggestions?

    If you lend someone a tenner and never see them again, it was probably worth it.

    Really sorry, have absolutely no intentions of squashing your cat;)
    (although neighbour's cat maybe....), but I still don't know what to do with the veg!!!

  • Halve the squash [use a small bladed knife]and put in a roasting tin cut side down with a tablespoon of water. Bake uncovered in oven gas mark 4 or 180c for 40 to 50 mins until soft. Leave to drain on a rack of some sort then scrape out spaghetti.I usually then heat it up again.Serve with a well flavoured pasta type sauce. It can also be served with butter or grated cheese.

    I imported these from Israel 20 odd years ago (I am a fruit and Veg importer)
    The best thing to do is cut off the top of the squash so its like a lid being removed, place in boiling water after washing the outer skin for 20 minutes, then remove from the pan and carefully with a fork scrape the inside of the Squash and it will peel away in Strands ...Serve(with lots of black pepper) with either other Veg and Meat or with a home made pasta sauce if you are Veggie............. Enjoy and I am sure you will be back for another. PS try Butternut next time roasted in chunks with peppers and red Onions.

    I have 8 large ones waiting for me to do something with them but I am stumped if I know what.
    Any ideas would be great. :j
  • Good question. I have 2 in the fridge and a ton on the allotment but all the google recipes sound yuck. I want something that you dont have to have had from birthda to appreciate.(fried with honey & cinnamon on 'about')

    Lovely how about
    Roasted butternut squash, season with olive oil and salt and pepper and spices if you want (cumin is nice as is chilli) cook untill slightly caramilised.
    Roasted BNS soup.
    With other roasted veggies on pasta or with couscous.
    My Morrocan vegetable tagine recipe posted here a couple of days ago.
    They are good to freeze, just cut into chunks and then use as and when required.
    Brilliant in veggie curries.

  • I know the theory about merging threads but does it work when the vegetables are different. Is this not like merging courgettes & cucumbers ?
