Slow cookers - useful for veggies?

Another gadget question from me - 10yo dd and i have recently given up eating meat -her idea :D
I had been toying with the idea of getting a slow cooker anyway but is it really worth it if i'm not going to be making meaty stews. I was thinking that i could use it to simmer dried pulses and freeze them - would that work?

    I'm a [STRIKE]vegetable[/STRIKE] veggie with a slow cooker.

    I make soups all the time through the winter with whatever veggies we have in.

    Its fantastic. :j

    Also, veggie casseroles/stew, veggie chilli etc can all be made in the slow cooker.
    Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...

    We are veggie and use a slow cooker at least once a week if not morw.
    Tonight we had sweet vegetable stew (quorn pieces, potatoes, butternut squash, onions, tomatoes, cayenne pepper and veg stock).

    We also do moroccan chickpea stew, chilli, quorn and veg caserole etc etc. Basically any tomato based saucy thing or any caserole. I substitute quorn for chicken in a lot of recipes.

    Evrything works fine and I haven't had any disasters yet:)
