    Hi SS,

You can indeed, providing you cool it quickly and freeze it as soon as it's cooled. Also reheat it until it's piping hot right through once it's defrosted.

This thread has more opinions that may help:

    Freezing rice?

I'll add your thread to that one later, once you've had some more replies.

Edit: This thread has some recipes and advice on making fried rice: Egg fried rice
  • When you say cool it quickly, can I just portion it up and whack it straight in the fridge for an hour or so, then freeze it? :undecided

Thanks. Will take a look at them. :D

No, best not to as it can affect the temperature of the fridge and other food that you have in there. Normally I pop it (covered) onto the kitchen windowsill and it's cold within about half an hour.

Yes, you can freeze just about anything without getting ill. :D

Eating it afterwards is where the risk lies. ;) :rotfl:
If you lend someone a tenner and never see them again, it was probably worth it.

Fill the sink with cold water, with ice if you have some. Put the rice into a deep bowl and stand it in the sink so it's surrounded by icy water. It will cool down in no time.

i do this all the time.

Just cooked the fried rice and leave it cool down. Once cooled just portion it up and bung it in the freezer. I also do this with boiled rice.
  • Ok, next question. Defrosting! Are there the same risks as when cooling the rice? :undecided

Should I defrost in the fridge? :undecided
  • I usually defrost and reheat in the microwave.
