Uses for massive bag of cooking apples?

Any suggestions for a big bag of green cooking apples from a friend of mine?
They're too sharp for applesauce, unless I added loads of sugar. Which wouldn't really work, as I'd give the applesauce to my daughter and she's far too little for sugar.
I had thought apple pie, apple crumble... the recipes for apple bread only use 2 apples. I'm looking to use ALL of them.
Ideas?

  • They will keep for several weeks (months even) if you put them in a wooden or cardboard box in a cool place, like a shed or garage. So you don't need to rush to use them.

    But if you are absolutely desperate to, apple chutney perhaps, or apple leathers? (Sorry don't have recipes but am sure you can find some on the internet)

    i made apple pir yesterday and apple sauce also as i had a few and have popped it in the freezer

    we make loads.it is really nice and easy to make.
  • I have the same thing, my parent's have apple trees in their garden. I have already made apple and blackberry jam - recipe here - with blackberries I picked. It was really easy to make and I've nver made any jam before.

    I'm also planning on making lots of apple chutney for xmas hampers

    Whenever I've had loads of apples this is what I've done -
    apple crumbles

    cooking them with dry fruit, cinnamon in a saucepan and having with ice cream or pancakes

    apple fritters

    found a recipe for apple soup I plan to try

    cranberry and apple cookies

    baked apples

    chopped them up, added sultanas, cinnamon, honey and baked with rice in the oven

    Cut in slices and added to most dinner recipes I've made e.g. roasted along with other veg, put into home made soups, fried them with meat, added to stews etc

    you can puree them now, and freeze in containers to use later - apple cake, apple muffins, chutney.
  • How about apple butter
    It's easier to get forgiveness than to ask permission ;)
  • Apple butter can be used as a glaze on pork at the end of cooking, spread on toast, used as a fat alternative in baking..... and it is, in fact, dairy free! It also happens to taste delicious.:)

  • Hi I have worked out a delicious apple cake recipe. It can take more apples than this and it keeps the other ingredients down in quantity - given the apples are free this makes sense! It still costs something though. Serve ideally with mascapone.

    5 small cooking apples
    90g dark brown sugar
    90g whole spelt or wholemeal flour
    90g butter or margarine
    1 egg
    1 1/2 tsp baking powder
    1 tsp cinamon
    1 tbs demarara sugar
    handful sultanas

    Preheat the oven to 200C.
    1) Mix together the cinamon and demarara sugar to make cinamon sugar.
    2) Slice the apples thinly and layer them in a cake tin, sprinkling the cinamon sugar after each layer.
    3) After the final layer of apples, scatter the sultanas over the top.
    4) Cream the butter and sugar together. Then gradually incorporate the egg and fold in the flour and baking powder.
    5) Spread this mix carefully over the apples - it will be quite a thin layer, but don't worry. Just make sure everything is just covered especially the sultanas or they will burn!
    6) Place the the oven, turn down to 180 and bake for 25-30 minutes.
  • There are some good recipes to use apples as part of a main course. Look at the Abel and Cole website - they've got sausages served with braised red cabbage which has apples in it with red wine..vinegar.
    Towards the end of roast pork you can put in slices of apple to roast. Do it too early and they will disintegrate!
