Giant Puffballs

Now is the time to look for Giant Puffballs in fields and at the side of paths (not much chance of mistaking them for anything else) - these make really good eating when they are young and pure white.

Try Puffball, Celery and Garlic soup:-

Recipe:

500g Chopped Puffball (i usually peel them, chop off the base and then check for creatures :-) )
4 stalks of Celery (Sliced)
3 or 4 cloves of Garlic (whole)
3 tbsp of Dry White Wine
1 pint chicken stock (could probably use vegetable)
2 Tbsp Worcester Sauce
Salt and Pepper.

Put the puffball, celery and Garlic into a large saucepan and add the white wine - cover and cook over a low heat for about 40 minutes (until everything has softened)

Put into a blender and add half the stock and blend until smooth (or your preferred texture)

Return to the saucepan and add the remaining stock and the Worcster sauce, bring this to the boil and stir.

Add Salt and Pepper top taste and serve with crusty bread.

Looks horrible but tastes lovely.

    I had a huge one this year - 2.5kg! was at my wits end thinking of things to do with mushrooms :)

    These are also scrummy just carved into slices and fried like steak.

    mmm yes. fried in butter with black pepper. Delicious! My mum also used to chop them up, pop them in a sauce pan with some milk and a bit of flour, lots of black pepper and a pinch of salt - heat gently until sauce thickens, then serve on buttered toast! Gorgeous comfort food. My mouth is watering at the thought!x
