can anybody point me in the right direction for a recipe for damson jam please
I collected some today did not take loads as I only want make 3 or 4 jars as gifts, an thought wildlife need it damn more than me

I am delving into an old Good Housekeeping book, Damson Jam as follows:
2.5 kg damsons (5lb) washed
900 ml water (1.5 pints)
3 kg sugar (6lb)
Knob of butter
Put damsons in preserving pan with water, simmer 30 minutes gently until soft and pulpy.
Remove from heat, add sugar and stir until dissolved.
Add butter, then return to heat, bring to boil, and boil rapidly for 10 minutes.
Use slotted spoon to lift out stones as they rise to the surface.
Test for a set*, and when reached, take pan off heat, remove any scum on surface with slotted spoon.
Pot and cover jam as usual. Makes about 5 kg of jam (10lb).
Just adjust to the weight of damsons you have.
* To set test: cold plate in fridge then pour drop of jam. If it wrinkles up when u push it with a finger, it's ready. Or jam thermometer (105 degrees C, or 221 degrees F); or flake test - life jam from pan on spoon, let it cool a little, allow to drop back into pan. If it has been boiled long enough, drops of jam will run together along the edge of the spoon and form flakes which break off sharply.
Don't forget, you need clean, hot jars for the jam, wax discs on top of the jam before you cover, and can then put on cellophane wrap held by elastic band. Supposed to keep for over a year.... Never lasts that long in this house!

Oh the memories you have brought back there. My Gran, sorely missed, always made damson jam every year, as well as rhubarb and ginger and blackcurrant. Oh it was fantastic, although was not so keen on picking the blackcurrants. Half an hour was more than enough!0

Excuse my ignorance but what is a preserving pan? Do I need to buy one or will any pan do really?
I have so many damsons, not sure what to do with them apart from jam? Any suggestions?0 -

You can make Damson Jam in the microwave quite easily, and less washing up afterwards! :jNormal people worry me.0
