    What about small savoury or sweet muffins?

    Grated courgette and cheese, spinach and cheese, cheese, tomato and ham, apple, banana, blueberry etc.:D

    What about blitzing the fruit in a bit of juice and adding to a jelly?

    What about carrots or parsnips mashed into potato and made into little potato cakes that they could have cold ...make a tomato salsa or tomato sauce to dunk them in.

    What about a veg patty/burger for sandwiches/pitas, or a veg samosa/pastie type thing (could do with plain chopped veg in pastry)?

  • Thanks parsonswife8, thats reminded me that I have got a recipe for courgette and cheese muffins and I am going to give it a try. They dont sound very nice but I have a friend who used to make cheese and ham muffins and I was surprised at how good they were. I have also got some ideas for breakfast muffins that I want to experiment with.

    There are also recipes around for cakes with courgette in them - I haven't tried it yet, but may well do when our courgette plants start to overwhelm us! The bonus is that the cakes are also low fat, as the moisture comes from the courgette.

    What about carrot cake? Or fruit cake?

    Will they eat cold pizza? You can make a tomatoey sauce with lots of veg whizzed up in it, and top it with lots of veggie bits, pineapple etc, a bit of meat and limited cheese so it is at least as healthy as a sandwich, or even healthier if they won't eat salad bits in their sandwiches!

  • I tried jelly's once.. pots came home they'd eaten the jelly and left the fruit then asked if next time i could leave the lumpy bits out. :rotfl::rotfl::rotfl:
    love this! my DH is equally averse to fruit + veg (he will only eat pink lady apples...the most expensive brand possible?) I am slowly training him...;)

  • Cartons of fruit juice can be expensive, but why not try a small reuseable bottle and a litre carton? I think they Aldi OJ and Apple juice are 52p for a litre, and I use a carton over five days for my two boys, they get it in the juice bottles which came in their lunchboxes, and have a 500ml reuseable water bottle for drinking in class/ at break etc.

  • Jennie Maizel's book Finger Foods for Babies and Toddlers has a recipe in for chewy fruit snacks. I made them once, and it was basically loads of dried fruit blitzed together until smooth, shaped on a baking tray and "baked" on the lowest setting until juuuuust starting to darken. It's occurred to me that this mixture might hide particularly well in flapjacks, if they'll eat them, make them lovely and chewy and reduce the need for sugar too...
