can you freeze Aubergines ?

My sons FIL has given me some that he grew in his garden and I'd only brought some for a recipe this week already. I was wondering if I sliced them first would they be ok ?

I don't know whether or not they can be frozen raw, but I have successfully frozen ratatouille with aubergines in it before.
Maybe you can get some ideas on using them up from this thread until someone who knows more about freezing aubergines comes along.

Dunno about freezing but when sliced they dry very well indeed.

I have a book called "growing for freezing". According to this you can freeze aubergines but I have never tried it myself (despite having a bumper crop of the things- It didn't occur to me until I saw this thread - thanks suep)
Wash and cut into thick slices
blanche for 4 minutes
open freeze then pack in bags

You can freeze anything......absolutely anything. But.....not everything freezes well, thats the thing.
Aubergines have a high water content so I would treat them as mushrooms before freezing.0 -
We freeze sliced BBQ aubergines and they are fine. It is best to use them fairly quickly, within a month or two but still OK.An average day in my life:hello: :eek::mad: :coffee::coffee::coffee::T
