Morrocan pumpkin and red bean tagine

This is my recipe and i have to say its yummy and cheap!

no exact measurements.

OK
i use a tin of red kidney beans
A handfull sprinkling of sultanas
Some pumpkin or butternut squash
a courgette or round squash
an onion
a pepper (red/orange)
A tin of tomatoes
sometimes an aubergine but normally not.
a couple of teaspoons of cinammion
a teaspoon of ground ginger
a teaspoon of ground cumin
a teaspoon of caraway seeds (sometimes i use this sometimes not)
Some marigold vegetable bouillion mixed with hot water

You can fry the veggies in olive oil first, but really not necessary. Then just cook them all up untill cooked! Keep the veggies fairly chunky. If need be thicken with cornflour.
If you have some lurking pine nuts these are nice toasted and served on top.

Serve with couscous made with veg bouillion, and some crushed caraway seeds to the couscous, and if you want juice of an orange if you want it orangey and sometimes some fresh corriander, its a real throw it together meal and depends what i have to use up. I had it with quiona today.
