How to use up all those apples?

No doubt like everyone else with an apple tree in their garden, I am a bit overwhelmed with apples at the moment. My family and friends are getting a bit sick of me asking if they'd like a bag. I have made all the usual;apple pie, blackberry and apple, apple cake, apple crumble, baked apple.
I just wondered if anyone had any other recipes or ways of using them up. I know that if they just fall to the ground and rot they are helping the soil, but it still seems a waste.
