Leeks? Like leek and potato soup maybe?
Chicken ( and sweetcorn) soup
Can he have things like Spring rolls?
I guess anything with cheese is out, but theres a vegan version of mozzerella that might work? Dont know what with though In fact theres quite a lot of vegan versions of "stuff"
What about nut roast?
Hasnt his Dr given him a list of what he can & cant have? ( as opposed to what he will & wont eat)

Have you tried the CookingbyNumbers website? You can tick the ingredients you have available and the site will generate however many recipes it can with the stuff you have in your cupboard. I have made a couple of recipes from this site and they have gone down really well.
