Potato dehydrate or not ?

Hi there I'm after some ideas as I've been so inspired by the peeps on this forum I now have no room in my freezer due to all the baking I've been doing!:D I grew rather a few potatoes this year and I have stored the larger maincrop,baked lots of goodies (hence the freezers jammed) and would now love to dehydrate some possibly as they take up so much less space! Problem is I'm not sure wether to dry them sliced,mashed or however else has anyone ever done these before or could someone possibly suggest which they think would be best please.I have new potatoes and maincrops coming out my ears..although I do clean them regularly..:rotfl: Thankyou
