What can I make with ...?

Right, I know you guys are just great at this sort of thing, as the sheaf of printed recipes stuck on my fridge door will testify.

I need cake. I really crave sultana fairy cakes. I'm trying to lose weight. I don't have a sieve. Or any paper cases. It's 9pm. Help!

I have flour (SR), eggs, milk, margarine, granulated sugar, sultanas, nuts and seeds, apples, spice and some tinned fruit salad/summer fruits. Oh, and oats.

I find when I crave sweet things, if I cook myself something sweet I can usually stave off the craving - just a taste of the finished product is fine. Any suggestions for a sieveless sultana sponge recipe?!

  • i seldom use a sieve, try this one

    weigh as many eggs as u want to use
    weigh the same amount of SR Flour
    Granulated sugar
    butter/marg

    cream butter amd sugar
    add eggs and flour alternatly in several stages beating in each time

    then you could add a handfull of fruit and put it into a greased loaf tin to bake, or a greased ramekin
    or this is quick!
    grease pudding basin put in tin of fruit salad (minus juice) add cake mix and microwave till cooked (if u insert a skewer or thin knife it comes out clean) or bake it, turn out as an upside down pudding, or do the raisin sponge like this

    Just ignore the bit about the toffee sauce, and put some sulatanas in the batter.

    All in 4 mins. Could be tempted myself....no...will...not...give....in......

    Well done you - I find if I give in I have to scoff the lot. A taste just isn't enough for me.

    Oh good heavens, I'm off to bake a cake at half 9 at night just to satisfy a craving ... this is what happens when OH is in charge of dinner, bless him, and serves up non-diet-friendly food resulting in late-night glucose urges! My poor microwave won't know what's hit it .... <cackle>

    If its 9 pm and I want cake then I do a sponge cake (choc, sultana, choc chip, pineapple whatever I fancy) and put it in a greased casserole dish and microwave it!!

    Get to eat it quicker then!!! ;)

    yes i did mean the same weight in eggs, flour, marg, sugar! its a v ery oldfashined way of making a victoria sandwhich which works particularly well if you have hame laid eggs that are many sizes! i once made a huge one using 6 goose eggs! they weighed 7oz each!!:eek:

    My goodness, what size tin did you need for that? Or did you just microwave it?
