soggy defrosted bread

I buy bread in the form of loaves and baps and freeze them.

I defrosted some baps and found that the bottom of a couple them had soggy bottoms ;)

I leave them in the bag and put in the frige to de-frost. I don't want to waste them. So I cut the soggy bits off. But how can I stop it happening.

    Might it be cos they have been in the freezer too long?This happened to me with hamburger buns.I think maximum time is three months after which the quality is impaired.

    Don't think so they where bought the last bank holiday at the end of August so have not even been in the freezer for a month.

  • Could still be freezer-burn... I find frozen bread 'turns' v. quickly.
    I buy two at a go for economy, (fastidious about best before dates) but time the second loaf second half is reached it doesn't defrost anywhere near as good. (Use approx. half to three quarters a loaf a week, mixed species)

  • The longer bread is frozen the more ice it picks up, one way to protect it is to wrap the bread closely in clingfilm and then put it in a freezer bag, hopefully the ice will be between the clingfilm and the freezer bag.
    If you don't fancy doing that the other thing you can do is remove the bread from the bag while it's still frozen, brush the ice off it, then let it defrost

    Could still be freezer-burn... I find frozen bread 'turns' v. quickly.

    One reason why I only defrost what I can use in the next few days. So transfer from one bread bag to another.

    I find the same thing Calley. Some burger buns I froze recently, when defrosted had soggy edges - gruesome. I don't like bread that has been frozen for this reason.

    What you can do is sprinkle the tops with water and then pop them into a hottish oven for 5 minutes, this will restore them back to edibility again.

    When I'm defrosting a loaf I always stand it upright so if there is any sogginess it's normally just the crust at the end that it's been standing on.

    When I defrost bread I take it out of the bag it was in and place it on a wooden breadboard. Seems to get less soggy that way.

    Also have a defrost button on the microwave which works well for the baps and buns.

    I freeze bread and baps all the time with no problem, the only difference I can see is I defrost mine on the worktop rather than in the fridge.

    The bread is fine and it stays in the same bag as its been frozen in.
