  • I use foil to sit my pizza's on when i put them in the oven as I don't have a stone. Saves washing up also! I put a dribble of oil onto the foil first and rub in with some kitchen towel then put the thin crust pizza on. 200c fan (fan) and leave in for about 10 to 20 min. then pizza is cooked beautifully!

Amazon have a pizza stone here at £14.99. It has good reviews maybe someone could confirm if this is the right kind of pizza stone. Not too dear, as the pizza trays can cost a bit.

i have had problems with my home made bases being too doughy as well, my recent solution has been to grill the pizza base for a couple of minutes on either side befire putting the toppings on... it works a treat and gives it a nice flavour. once it's done, i close the oven door, turn off the grill and the oven's up to temp in the minute it takes to put the toppings on.

i like the tin foil idea too, though i think i'd still need to grill mine a bit.

I forgot to add I do put baking parchment on the tray first as well so they don't stick, no idea wether that makes a difference or not.

Hi, I got my pizza stones from Aldi - I don't think that it's a regular item so you'd have to keep an eye out for them I think that it was when they had an "Italian theme". I've also seen them in Superdrug, in both cases they've been under £5.00 each.

runny tomato sauces pool in the middle, try a thicker sauce maybe
vegetables that contain a lot of water, courgettes etc can make it runny
try a lower temperature in the oven so it can cook more thouroughly?
i use a home made tomato sauce as a base but always put it through a strainer first to remove as much liquid as possible

Actually, is garlic infused olive oil just a matter of getting some olive oil and garlic cloves and leaving them to sort of infuse? can I do this instead of buying tesco finest?

yes, but I remember reading somewhere that with home made infusions you should only let them infuse for a few hours before using them, whereas shop bought oils last for months. I think it was something to do with handling the garlic meaning that you would be transmitting germs into the oil which would then multiply...
