Any Mackems Out There Know About Leek Pudding?

    Thanks everyone for your help, I'll be honest with you I'm tempted to play ignorant over making it, it just doesn't sound that appetising, its just a suet pudding with leeks. Leeks have never really been a veg I like - my Nan used to serve them with boiled ham and white sauce, unfortunately she never cleaned them properly and we ended up with a mouthful of much. I think I'll stick to making him mince and tatties.
  • Yikes - it's always been a "Clooty dumpling" to me (from Newcastle) not a "Leek pudding" - he must be a posh Mackem (now there's an oxymoron) - but they're to die for - in fact it's out with the Atora now.

    I found this thread googeling for leak pudding, thanks to fudgem for this.

    If anyone is interested in how to make panackelty, this is how I make mine for the GF and myself.

    Can’t really give quantities, you will have to judge it on how many you are making it for.

    Potatoes
    Bacon
    Onion
    Tin of corned beef (or leftover meat from Sunday, or cooked sliced sausages)
    Gravy

    In an oven dish, place a layer of thin (1/4 inch ½ cm apporx) sliced potatoes
    Then a layer of sliced onion
    Then half your bacon (I use streaky cut into quarters)
    Then sliced (or cubed) corned beef, not to thin as it turn to mush.
    Another layer of potatoes, then onion, then bacon and corned beef
    Toped of with another layer of potato
    Next pour over enough gravy to just cover to the top

    Cook in the oven slowly until the top layer is brown and crispy (I use gas mark 4)
    You can add anything else you like really, carrots, swede etc , it’s a real good leftover dish.
