Meal suggestion with what I have glut of

I am veggie, and have loads of onions and potatoes (from veggie box and some left over from last time too), have the usual veg around (carrots, cabbage, beans, sweetcorn (on the cob), frozen peas). I always have Campbells condensed mushroom soup (use for pasta bakes) plus usual storecupboard stuff.

Any interesting suggestions for tea? Slow cooker has a coconut rice pudding in it at the mo - will be another 3 hours, but willing to look at any suggestions.

My meat eaters have boned and rolled breast of lamb with veggies for tea.

    You could layer the potato and onions and put a cheese sauce over them, then bake in the oven - or maybe you could use your mushroom soup for that and sprinkle a bit of cheese on top maybe? not too sure there as I don't like mushrooms.

    With your cabbage, carrot, sweetcorn you could make another layer. I use a glass mixing bowl and grate the carrot, slice thinly the cabbage - the sweetcorn (off the cob) would probably be best at the bottom then put a knob of butter on top and season then cover with clingfilm but make a hole, and microwave for 4/5 mins. Really easy that one and the rest could have that with their lamb too.

    If you have more onions left, fry some up to put in gravy for the lamb. Or make an onion mash.

    Thanks for those suggestions. The potatoes are the "new" type, smaller ones. Would your first suggestion work for this as they are not the floury type.

    I think they'd be fine. I just tend to use whatever I have for anything. I used new potatoes for mash the other day and left the skins on and it was really nice.

    The veggie layers is really nice with parsnips, swede, broccoli, anything you've got in really and it's so simple I let the kids make it and they can take their time as it's so quick to cook.

    Have you tried seaching Campbells recipes. If you are in to their soups, there are a million and one menu ideas.
  • soups, pasta bake, mixed rice and vegetables, curry, pasties, the usual chips, mash, pasta bolognese etc

    samosas or onion bhaji`s (sp?:o ) make a nice change you can use your cauli/broccoli onions peas potatoes etc in the samosas mush them up with a few spices and maybe an egg and breadcrumbs to bind and fry in a thick batter, gorgeousssssss :j dont ya just love my very technical cooking instructions!:o :D
