Aromatic Herbaceous Seasoning

Recipe as promised
All herbs used are dried
1.5oz basil
1.5 oz majoram
1oz winter savoury [if availabe]
1.5oz thyme [could use lemon thyme]
1/2 oz bay leaves [ground up]
1oz ground cloves
1oz white pepper [we ground up pepper corns]
1oz powdered mace
1/2 oz powdered nutmeg
1/4oz cayenne pepper
grated rind of 3 lemons
1 crushed fresh garlic clove
Mix them all together. The dry ingredients soak up any moisture from the fresh stuff. Store in screw top jars. Add to sauces, soups and stews. From an 1879 recipe
