Hey there,
I'm starting to trhink about trying to be a bit better with meal planning. I don't want to get into Monday this, Tuesday that, but have a better selection of recipes I can make with usual stuff you keep in the cupboard to vary our diet a bit.
The main problem I foresee in this plan is my greedy husband! We never have leftovers of anything. If I made double he'd probably want to try and eat some of the other half. He's a big eater but he is 6'4" and he's not carrying any of it! As an example he would think nothing of eating 4 or 5 baked potatoes with meat and veg. But then by contrast some nights he decides to just eat sandwiches for his tea so I guess he MAYBE evens himself out!
Neither of us are big fish eaters, he doesn't 'do' curry and I struggle to feed him cheese unless it's Cheddar or mozzarella.
I'm interested in some creative/unusual quick meals (don't need to be especially easy I'm a decent cook - it's the time that counts!) that I can make from basic cupboard staples and any suggestions on achieving leftovers!
P.S. I'm tee-total so there's no wine in this house - although I do often sucessfully use stock/vinegar to replace in recipes :cool:

LMAO - just gone into kitchen to find greedy husband had cooked himself a garlic bread and eaten it all without even thinking to offer me a piece!

My dad always has about 5 or so spuds with his dinner - just err on the side of caution and chuck a load in the saucepan. Great for spud bread on a Sunday morning.0
