does anyone know if there is a low-fat spread that is not too expensive and is suitable for baking as well as spreading?

I use the olivio spread (I buy the supermarket branded version, its cheaper), and it works perfectly.
You could also look at muffins, carrot cake etc that don't require butter or marg, just oil, as an alternative.0
