Well I've just realised a major hiccough!
Everything I cook at the moment has to go with courgettes, French beans or runner beans - and we have to eat lots of stuff from the freezer to make space for frozen tomato salsa, passata and French beans. So ...
Tues: (not sure - risotto? or beef rendang that I didn't make last week) leftover pork and gravy from Sunday made into stroganovish thing with lots of french beans chopped up in it.
Wed: (chicken stir fry with peppers, carrots, spinach & maybe red cabbage all from garden) hm cottage pie & red wine gravy from freezer with beans
Thur: (paprika goulash) Lamb slices from the freezer with steak & mushroom casserole gravy with runner beans
Fri: (tuna, pasta bake) No something to go with runner beans

Sat: Pork with cream & mushrooms with French beans
Sun: Roast chicken & gammon with potatoes from the garden and runner beans
It is a good job we like beans:) as do my dd1 & family (dh, ds1,ds2 & ds3) and my neighbours:)
This still does not address my courgette mountain - think I'll be making moussaka on Monday with home grown courgettes and aubergines. What about courgette 'lasagne'???
Hope all your weeks are going well

I made up a recipe for courgette and bacon lasagne a few months ago when I had a veg drawer full of the things, and it's pretty scrummy if I do say so myself. I just cooked grated courgette with chopped bacon and garlic until very soft, then stirred in some ricotta or other soft cheese and some seasoning. That's layered up with lasagne sheets and tomato sauce; finish with tomato sauce and some grated cheese, and baked until bubbly and cooked through.

Best of all, grated courgette cooks down to next-to-nothing, so it uses up lots of courgettes in one go. :D

Courgette moussaka's OK, BTW, but not a patch on the aubergine variety imo. (Can you tell the courgette mountain's a perennial problem in my house, too? :o)
Back after a very long break!

my plan is late for this week, early for next.

    Friday - Enchilada & veggies
Saturday - Home cooked Gammon Ham, mini roasties, egg & peas (HM rolls)
Sunday - Roast Chicken, Spuds, Yorkies, Veggies, Stuffing & Bread sauce
    Monday - HM Pizza
    Tues - Chicken Wraps
Wed - Pasta cheese with bacon & HM rolls
Thurs - HM Chicken Nuggets, E F Rice & Veggie stirfry
    Fri - Freezer surprise!!

Pleased that I have most of the ingredients in for this. Just need bread, milk, yoghurts, fruit, veggies & crisps for pack-ups.

Still have 1/3 of a chocolate cake left so once that is gone will do flapjacks and maybe some brownies for snacks.

Lunches will be pack-up type with left over chicken from the roast and the gammon joint I am cooking off on Saturday.
