Hello all,
I intend to make this curry for tea and the receipe says its enough for 4, if this turns out to be so is it safe to freeze. If so how long would you keep it for and how would you re-heat it safely.
My freezer is standard upright -18
I do not have a microwave and won't be freezing any rice with it :eek:
Chickpea Curry
2 tbsp Sunflower oil
1 large onion chopped
2tbsp curry powder, mild or medium as you prefer
400g can chopped toms with garlic
350g new potatoes, boiled and cut into 1cm cubes
400g can chickpeas, drained
2tbsp lemon juice
2tbsp mango chutney
Heat the oil in a suacepan add the onion and cook until soft. Add curry powder and stir over a low heat for 1 minute.
Add the canned toms and 50ml water. Cover and simmer for 10 mins. Add potatoes, chickpeas and lemon juice, and simmer, uncovered for a further 10 minutes.
Stir in the mango chutney and serve.

I often make large batches of HM chickpea curry and freeze half of it ... and we've never been ill.Debt at highest: £6,290.72 (14.2.1999)

Of course you can, why wouldn't you be able to. Just make sure you defrost and heat up properly when you eat it. I keep stuff in my freezer for ages and ages, far longer than recommended in some cases, and have never had problems.0

Its not so much that I don't think I can freeze the curry its that I don't know if you can.
I've been batch cooking and freezing for all of two days
Yes it turned out very nice indeed, although I didn't put all the potatoes in it called for, just as many as looked right.0
