gailey, I've read more carefully the links provided and think you might get some guidance from these regarding your queries.
One of my first looks into vinegar-making was via wikipedia which I found interesting:

Did anybody try making vinegar?
An update on mine - After seeing fruit flies "whizzing about", it seems that they have started to breed in the vinegar-to-be (looks like larvae/maggots!). Should I abandon my batch of vinegar-making?

sounds a grreat idea ,but I think I read somewhere that raisins are going to be a bit more expensive this year as there will be a shortage of them so I'm saving mine for Christmas stuff, mini cakes ect0

I regularly read a blog called Unbought Delicacies. Mrs L on it writes about making white vinegar by fermenting 1 quart honey to 8 quarts warm water in a vinegar crock. Her blog isn't copyrighted so it's ok for me to repeat her method here:D

Thanks for the replies. I've just read that the fruit flies help the process but in this case from cider to vinegar. Whilst I am not keen on the fruit flies and their activities, I do not know whether they are necessary for my vinegar-making? Do I persevere?

I've made several different vinegars over the past few months - persevere, dannie, it's worth it!
(and have a go at pineapple vinegar - it makes a fantastic salad dressing!). Just put a bit of doubled over muslin over the top of the container you are using, it will let airbourne yeasts in but keep the fruit flies out. 0 -
BinkyTheHorse - Thanks for your reply. I think my jars with lightly screwed lids was my mistakel so muslin sounds better. I am reluctant to persevere with my raisin vinegar recipe and instead use cheap superstore vinegar as the base in future. However, I am going to check online whether to discard this "vinegar" first. It seems unlikely that all the fruit flies and their offspring in and around the vinegar is okay; very offputting to eventually consume!0
