Heads of Ayr farm park is a great day out for the kids. Culzean Castle is also a good day out...its owned by the National Trust.

The Anchorage is nice for a meal and near the Ferry Port, as its Scotts at the harbour. If your looking for something nice and homely (Homemade lasagne, steak pie etc) and HUGE portions then the Swan in Portland Street is great. They are all family friendly. They are all within 5-10 mins walk to the Ferry terminal.

As for stuff to do then theres the Burns Museum in Alloway. Ayr itself is good for shopping with all the main High st shops. There are some good local Farm shops in nearby Minishant and Crosshill near Maybole.

If your looking for something to do thats free then theres a fantastic beach park in Ayr down at the sea front, Theres loads of different areas in it so suitable from ages 1-12.

This thread has some pointers. Depending on the age of the kids, Loudoun Theme Park is great for a day out.

Can't think of any markets that are on weekdays, though their may be one in Saltcoats on a Wednesday ( but it is pretty carp on a Saturday).
