Help with misc ingredients....

Fridge & freezer full but nothing to eat....Have tried usual sites, but with no luck.....
Advice please for the following for a meal for 2:
2 sweet pots
small new pots
mushrooms
parsnip
1/2 cauliflower
Cheese
The above are all looking ominous so need to be used.....
To go with:
Chicken breasts (or fish fillets)
Not looking for something too heavy (although craving mashed sweet pots & parsnips, may sacrifice new pots & add ordinary to achieve this - but how do I do sweet pots to mash - bake 1st? Microwave?)
Also found some stuffing....could I layer breasts or roll up with stuffing? or use as a topping - if so do I make up as usual?
Have lots in cupboard - tinned toms, herbs, garlic etc.

Ooooh yum, a casseroley type thing!!! Chicken chopped up with sweet potatoes, tinned tommatoes chopped up, herbs, garlic, mushrooms and cauliflower. Bung all in a slowcooker/casserole dish/pan on the hob. Cook!
and serve with mashed pots and parsnips with cheese!!!
Can details further if you require!!! (can you tell my cooking is haphazard!!
)

If you have coconut milk you could do what I'm cooking tomorrow for DH and DS
Fry chicken, add mushrooms, garlic, small/med chunks of sweet potato. Add 1tbsp curry paste, 200ml coconut milk and 50ml water. Bring to the boil, cover and simmer for 15 mins....it is not of more importance than daily life, which I have an enduring wish to make as useful and beautiful as possible.

oooh you have some great stuff there
Id go for jerk chicken ( or even justa paprika glaze & oven/ grill)
Bake the sweet potatoes as you would a normal potato
Make a chilli butter ( same as garlic butter) and have that in your baked sweet jacket
Grill the mushrooms for with
A cacophony of carribbean flavours for a sunny day!
( and knock up cauli cheese & freeze it for another day)

Make a sort of Gratin Dauphinois with:
2 sweet pots (thinly sliced)
small new pots (sliced)
mushrooms (sliced)
parsnip (thinly sliced)
1/2 cauliflower (roughly chopped)
Cheese (grated)
Add a little minced garlic and single cream.
Chicken breast:
Make "I" shape incision on the back and then open flat. Sandwich between clingflim and use rolling pin to flatten it out. Place made up stuffing, shaped into a thick cylindrical shape, in the middle and roll up. Wrap the roll up in cling film and twist each end up. Put this into the fridge for an hour or so to let the shape settle. Before cooking, take out of fridge and brush melted butter on the outside - try rolling in some chopped fresh herbs for a nice effect. Pan fry and brown the outside, and then cook in the oven until the meat is cooked through. Leave to cool for at least 5 mins. Slice on the diagonal and arrange on plate.

Par boil hard veg,then roast all in olive oil topped with cheese at the end.

Delayed to Sat night, the menu was:
Sweet potato, parsnip & potato mash.
Cauliflour cheese
Garlic mushrooms
Stuffed chicken breasts rolled on herbs with a little cheese on top.
Delish, except chicken a little dry (possibly cos I was watching Mariainstead of watching dinner)
Thanks all, and will be trying all other recipes.
