Does anyone make their own sausages/sausage meat? I am fed up of buying sausages that either have no meat in them or are full of gristly bits. Even the most expensive ones are not a patch on sausages of yesteryear, so I thought I would have a go at making them myself. Googling produces lots of sausage recipes but not to actually make them

Not really what you had in mind, a relative of mine who lives up in Scotland takes her cattle to the butchers who make sausages with interesting combinations. She wants to try the sausage & haggis next time.
