    When in doubt 'freeze it' is my motto. Just yesterday i harvested another punnetsworth of strawbs and didn't really want to eat any more at the moment so in to the freezer they went. If i fancy making strawb jam in the deepest winter, i can do so with my homegrown strawbs now..though i doubt they will last that long!

    I use what ever fruit i have to make jam and it always works. I would use the same weight of fruit as sugar and i add a couple tea spoons of lemon juice to reach the setting point. I made some red currant, blackcurrant and strawberry jam a couple of weeks ago and it was lovely
