    Correct, oil the steak not the pan.
    Secret is to get the pan extremely hot and then turn it down to its lowest heat.
    For a really tasty steak marinade it for 24 hours in olive oil, teriyaki sauce, garlic and balsamic vinegar with some mixed herbs. Then tell me you have to go to France for a good steak!

    As far as the steak goes, spend a bit more money and get a cut of rib eye. By far the tastiest cut.

  • If you turn down the heat,is there enough heat to cook both sides,or do you sear each side first?

    I don't think i have ever seen rib eye in my supermarket,do you get it from a butcher?

    Sorry for the novice questions,but you can see why my steaks are rubbish!

    Only ever grilled mine as I don't like greasy/oily food. Usually topside cut into steaks or sirloin bought on special offer, 1-2 mins each side under the grill & straight onto the plate with a salad & loads of caramalized onions. Yum. Oh crikey, now I'm fancying it for dinner which means stopping at Sainsburys on the way home...............

    I use a smoking griddle and always buy my steak from the same butcher who has never given me a duff one yet. I have a meat tenderising mallet but don't use it unless I want thin strips of pork steak or whatever.

    I agree with Judi about the feelgood factor of bashing meat with the rolling pin, gets rid of all your frustrations.
