dinner ideas - spinach/courgette etc

Hello,
I'm supposed to be having corn hotcakes with tomato salsa for my
dinner tonight, but there's some left over roast chicken in the fridge
which I'll probably give to DP with a jacket potato and some veg, and have the corn hotcakes tomorrow, which means we can roll Tuesdays meal over to next week and so saving some money on next weeks food shop :j
There's half a bag of lovely baby spinach, that I'd like to use
tonight for something for me, but I don't know what to do with it. I've also got peppers, a home grown courgette and some tomatoes, some fine green beans, spring onions, onions etc.
I've got quite a lot of store cupboard ingredients,
fridge - cheese, milk, etc
Carbs - potatoes, rice, noodles, pasta etc
cupboard - pine nuts, sun dried tomatoes, all sorts really
but has anyone any ideas of something I can throw together?
Any ideas much appreciated

how about a spanish tortilla (omlette)? You could chop and sautee the veg with some garlic and herbs and maybe even some thinly sliced, parboiled potatoes, then add egg + milk mixture with some salt and black pepper. Let the bottom set, then sprinkle grated cheese on top and pop under a hot grill. You can serve it with a salad made from the spinach leaves, tomatoes and the pine nuts, plus a homemade vinaigrette (oil, vinegar, salt, pepper, herbs, garlic). Hi, what about pasta with spinach and cheese sauce? Make up your cheese sauce as you would for macaroni cheese and add the spinach in a few minutes before the end. Sounds weird but it works (works best with a mild cheese). Tear your spinach up rather than cutting it. As for your courgettes, you could have veggie kebabs. Just skewer courgette, onion and pepper on to barbecue skewers then grill serve with hot butter mash (a little twist of black pepper over it all just finishes this off a treat). Or courgette frittata (I think thats what its called anyway!). Dice up your courgette, a very small amount of diced potato, spring onions.......etc any veg you want to add (you could even add your green beans cut up if you wanted). Stir fry these in a very tiny amount of oil until cooked then add a beaten egg (with a dash of milk added to it) and a little grated cheese. Ooo thanks, lots of ideas. We had hm chicken curry last night, so I won't do the curry...but I'm debating between a veggie cheesy pasta thing, or a salad with spinach, tomato and pine nuts with something...

I've come to this thread too late to help this evening but, for future reference, eggs are the perfect partner for spinach. I'd go for 'poached' myself, but an omlette would no doubt be just as good.Official DFW Nerd No 096 - Proud to have dealt with my debt!0

I'm trying to remember what my aunt does with spinach and tortillas. I think she layers the spinach and some cheese between 2 tortillas in a Wok or big frying pan. Somehow it seems to glue together when she cooks it (she turns it over when cooking) . When she puts it on the plate, she cuts it like pizza.
I'll have to ask her what is involved. My memory is appalling and I had it just the once many years ago.
