    I think its true, i heard that when you boil the veg, the 'goodness' is boiled out into the water (thats why the water changes colour), but i would guess if you use the water in your gravey or stock, then you are still retaining the goodness!!!!

    I tend to steam my veg, as it retains the colour, and the crunch(i like my veggies al dente!).

    That article was interesting!!!! Glad i steam all my veg now!!!! Mind you, the water underneath always colours up, so i know some of the nutrients are dripping into it, but then, i normally use it for my gravy so hopefully they are going in there!!!!
  • You can use the water you boiled your veg in in soups and stocks, but the best way to keep the vitamins in is to either steam them or put them straight into a small amount of boiling water for the shortest time needed.

  • When I was little my Dad used to make us drink the veg water! I hated it but we were all robust and certainly, I would say, healthier looking than some of today's kids.

    The simple answer (for those who don't want to read the BBC link above) is that lots of vitamins (B group,C) are water soluble, so will leach into the water if the veg is left in there for long periods.
    Steaming minimises the loss, or just use your boiled veg water to make gravy etc
  • My OH was very impressed the first time he watched me cook the veggies for a roast -
    I parboiled the potates for roasting, I then put cauliflower in the same water for cauliflower cheese, I then cooked carrots in the same water, he asked why, I told him that the nutrients were leaching out into the water and it would be made into gravy so all the goodness would be saved, he was quite taken with this as he hadn't seen it before, I suspect that his Mum did the same but he never went in the kitchen to see it done :rolleyes:
