    POTATO SALAD


    Serves 2

    INGREDIENTS

    400g of new potatoes
    4 spring onions
    4 tablespoons of mayonnaise

    METHOD

    Clean the potatoes. Scrape off any eyes or shoots. Don't peel them unless they really need it.

    Put the potatoes into a saucepan on a medium heat. Cover with water. Bring to the boil, then turn down the heat until it is just boiling (simmering). Boil for about 15 to 20 minutes.

    While the potatoes are cooking, cut the top and bottom off the spring onions. Take off the outer leaf and discard any slimy bits. Wash them and chop them into very thin slices.

    When the potatoes are cooked (see below), drain off the water. Cut the potatoes into halves or quarters, depending on their size.

    Put the potatoes, spring onions and mayonnaise into a bowl. Mix thoroughly.

    ADDITIONS AND ALTERNATIVES

    Use "designer" potatoes like Charlotte or Pink Fir Apple.

    Use 2 tablespoons of chopped fresh chives or a finely chopped normal onion, instead of the spring onions.

    Replace half of the mayonnaise with salad cream.

    Sprinkle with ¼ of a teaspoon of paprika.


    TIPS

    To test if the potatoes are done, stick a fork into one of them. If it is hard, give them a couple more minutes and test again. If it goes in easily, they are done just right. If it falls apart, they are overcooked.

    Mix everything together while the potatoes are still warm, even if you intend to eat it cold,. It helps the flavours to combine.

  • I made some lamb and mint kofta type things at the weekend for our BBQ, it was only value mince and all - hubby was being scathing, saying they'd be horrible but they were really nice, so he had to apologise :D my parents even took the rest away with them. sorry I mix metric and imperial weights - I have no idea what 450g is in imperial

    I 450gm pack of lamb mince
    1 onion finely chopped
    6oz breadcrumbs
    1 egg
    heaped tbsp chopped fresh mint
    2 tbsp mint jelly
    crumbled up stock cube (whatever you've got)
    worcester sauce
    onion salt
    black pepper
    splash of sweet chilli sauce

    blitz in a food processor or work into a mush with your hands. Put in fridge to firm up for a bit. Wet hands and shape into sausages or burgers. microwave on medium-high for a minute or two to firm them up (otherwise they'll never stay on the skewers or they'll fall through the rungs of the BBQ) cool slightly and thread the sausage onto a bamboo skewer to cook.

    Hubby always does a pasta side as well which is cheap, he cooks pasta shapes in strong chicken stock with worcester sauce, ketchup, oyster sauce thrown in (you don't need to salt the water as well) drains it, stirs in a bit of mayonnaise to stop it sticking together, then if you want you can add more mayo and other things like a tin of sweetcorn with peppers when it's cooled (we just have it plain as the kids always preferred it that way)

    you could make some houmus, I just blitz a little garlic, tin of chick peas (cheap!), bit of olive oil, then a squeeze of lemon juice and a sprig of coriander if you have it, serve with toasted pita bread, yum!

    mini jacket spuds are always good. Instead of buying special size pots I always just use bag of value pots . A little oil and then salt all in a rosting tin nice hot oven for about an hour, Serve in a basket dont split them all open cos if any left they make great fried or tortilla.

    bacon pasta

    pasta
    smoked bacon
    onions
    chilli to taste
    salt/pepper
    any leftover bits of your choice e.g peppers/sweetcorn/green beans/froz peas/courgette(you get the idea)
    jar of pasta sauce ortwo tins of chopped toms and some puree
    handfull of grated strong cheddar or parmasan or cheese of choice

    cook pasta (i use penne)...fry off the onions bacon and whatever veg you chose...add to pasta along with the pasta sauce/toms and chilli to taste...stir all together then add cheese...the cheese is there to help the sauce stick to the pasta so you only need a handfull..you will notice the difference when it melts through....lovely hot or cold ...


    my signature BBQ dish...mushrooms with blue cheese....

    take field mushrooms remove stalk smother cup side with butter add about 4 thin slices of garlic, a slice of blue cheese,black pepper...wrap losely in foil(to make a bag) and BBQ for 15 mins..serve with crusty bread to mop up the delish juices...(these work really well for a BBQ as once cooked they will keep, pushed to the cool end of the barbie, for quite a while without detriment...)

    if you can get any cheap fruit you could make maybe a fruit salad or fruit skewers.
    definatly try any butchers for meat or try if you got time and fridge/freezer space to get some whoopsied items. iceland usually good for vegetarian options.
    cous couse id agree to be a good idea, you could add loads of chopped nuts, some dried fruit or chopped veg you want to it to make a salad with it.
    pasta and rice you can do the same to once cooked etc, just bung whatever mayo, salad cream, veg, salad chopped you want with it into a bowl with rice,pasta and a good mix/stir.
    agree with coleslaw and potatoe salad, plus maybe a bowl of cheap salad, plus maybe if you can get a cheap bag of small new potatoe style spuds you could boil/steam them up, season to your taste and have them in a bowl on the side.

    yep lots of salads also how about some hm flat breads - Jamie Oliver has a recipe that is basically flour and yog - can cook them on the barbie too if you like, and slash and top with different flavoured oil/ butters and wrap around meats/ salads

  • Ok so I am so stupid- why did I not even think of going to the butcher's?! Hopefully I can pad out with some nice things from there!

    My menu plan so far is the following: does this seem balanced...?
    Food
    HM Jerk chicken wings
    HM Sticky chilli prawn kebabs (prawns on 1/2price at Tesco)
    Vegetable /halloumi kebabs
    Sausages
    Buns for burgers/sausages
    HM Three bean salad
    HM Mango and chilli salsa
    Green tabouleh
    HM pasta salad
    HM coleslaw

    I am expecting people to bring food and/or a bottle with them as well so this won't feed everyone entirely! The thing is, I have estimated that this food, plus a bit of alcohol plus charcoal and disposable cups and plates (not washing up for 20-30people!) will come to about 70 pounds! That seems like so much still!
