Hi everyone,

I'm having a tea party tomorrow evening nand making this beautiful cake - http://www.bbcgoodfood.com/recipes/3092/ultimate-chocolate-cake.

WOuld it be better to make the sponge late tonight and cool overnight, before doing the ganache tomorrow morning, or get up early and make it at 8 and let it cool down throughout the day and put the ganache an hour before the guests arrive at 6pm?

If there are any experienced cake makers out there that could advise me on freshness and development of flavours that would be great.

Many thanks

Is a very moist cake so should be fine making tonight. Also gives you time to make another one should the first not work out!
Recipe says 'cake keeps for 3-4 days'

Definately make this evening,Ganache in the morning.
Cakes improve by the next day and if you ice in the morning it will have time to set slightly.

OOH that cake looks nice I might try it but is it really 541 kcal a slice? My thighs are getting bigger just thinking about it!
