I've had a search but can't find any advice on this. Plenty of recipes but I need to be sure they will freeze ok.
I'm looking for recipes for batch cooking and freezing. In particular I want to replace some of the things we buy pre made in the shops like
Chicken Kiev
Chicken stuffed with ham and cheese
Other chicken breast recipes
Fish cakes

As long as the chicken hasn't been previously frozen, there's no reason why chicken Kiev (or other chicken dishes) won't freeze successfullySimilarily with fish cakes.
If the food has been previously frozen, it's safe to cook it and then freeze the cooked dish.

You're very welcomeIf I were making, for instance, chicken Kiev, I'd make it and then freeze. I'd defrost overnight in the fridge then cook.

so if i made chicken goujons with chicken fillets that were bought frozen i would have to defrost, make them cook them and then refreeze them? is that the same if i made fishfingers with fish that had been bought frozen?I will lose 2 stone by this summer!!!!!!0

Hi guccigoo,
Yes basically that's the idea. The general rule is that most things can be frozen once if they haven't been previously frozen in the same state. Eg if meat or fish has been frozen raw, you can't defrost it and freeze it again in it's raw state, but you can change it's state (ie cook it) and refreeze it once. However if it was already cooked when frozen it can't be cooked and frozen again.

Yes, it's perfectly safe. I often make fish pie for the freezer. I suppose 'cook' twice isn't really the correct word. The first time I cook it and the second time I 'reheat' it, which is fine when it's in a pie, but not ideal taste/texture wise if it's fish on it's own. It certainly won't do you any harm providing it's reheated until piping hot.

I think they are much better reheated from frozen because I think they can go a bit soggy if defrosted first. Others may prefer to defrost them before reheating. It's down to personal preference really.
