chutney making -any tips?

my wife followed recipes for tomato chutney/picallilli she pulled from a magazine and followed carefully. stored in a cool dark place for 6 months then tried. Aaarrgghh! inedible! I argued too much vinegar - she showed me the recipes.
anyone out there have any suggestions on how we do it PROPERLY this time?
