stewed fruit/compote

Hi there
I am hoping to get into the habit of making some nice stewed fruit/compotes, I want to make one up & keep it in the fridge so I can serve it over yogurt or on porridge etc.
Can anyone advise me on how long it will keep in the fridge? also is it just a case of bunging some fruit in a pan & adding a splash of water & stewing? should I add sugar or is that more of a personal preference
Any nice recipes/combinations out there
Oh lastly does frozen fruit work just as well?

I made a compote a couple of days ago with leftover fresh apricots and strawberries - it is really nice. I cut the apricots in half (left skin on and stone in), hulled the strawberries and bunged them in a saucepan with a couple of tablespoons of sugar and a splash of water, and a vanilla pod. Basically left them simmer down until really thick and beginning to catch on the bottom - this took a good half and hour. got the stones out and popped in a sterilised jar to cool. I would be happy keeping it a couple of weeks in the fridge, however, so far its gone into a pudding (spread on slices of stale scone/muffin type thing I made, then baked with egg mixture like a bread and butter pudding), topping my son's porridge, and served with my yoghurt, so only about a tablespoon left! Was hoping to make some icecream and stir this through but isn't enough left this time.
Fresher and brighter tasting than jam, and I reckon any fresh stone or berry fruits would be great - I compoted 'old fruit' that had been in the fruit bowl too long and will definitely do so again.0
