What cases/tins can I use for making muffins?

Hi everyone!

I've never made muffins before - partly cos I don't have the right tins. All I have is a flat baking sheet and fairy cake cases and I'm wondering if these might do the job ok. The cases are not as big as muffin cases - just the ordinary fairy cake kind.

Muffin mixtures seem to be quite wet so I'm not sure if they need the support of a tin around a paper case - any baking gurus around to advise?

    you can use the fairy cake cases, you'll just end up with more smaller muffins, which is no bad thing :D

    They should be OK on the flat baking sheet - try it and see, but don't go out an buy any more equipment until you've tested what you've got.

    hi ive just made some muffins and i used muffin cases and fairy cake cases cooked on a baking sheet in the oven :D
    I will lose 2 stone by this summer!!!!!!

    They should work, they might just be quite wide, but then they are easier to ice!

    If you double up on the muffin cases (i.e. use two together) they'll hold their shape a bit better and not spread out as much.

    Hi NualaBuala,

    Before I bought my muffin tins I did as angeltreats suggests and just used doubled up muffin cases on a baking sheet. It worked well. If you are using bun cases (which are smaller) the mixture will cook more quickly so you'll need to keep a close eye on them to stop them from overcooking. If you like well risen muffins put plenty of mix into your cases.

    Thanks everyone :T - I will double-case them! Smaller is better for me as I find the large ones way too big anyway.

    By the way, in case anyone is interested, I saw a nice idea for muffins when you have the tin but no cases. Well apparently you can just use the tin but if you want to improvise you can just get a square of greaseproof paper and squish it into the hole of the tin, then fill with the muffin mix. It looks really nice.

    I just have to find a recipe now am trawling through recipe sites for inspiration - if anyone knows a nice vegan recipe for banana and walnut muffins please share!

    When you run out of paper cases, I can recommend buying silicone cases which are sturdy and reusable.

    ASDA and Poundland sell Silicon bakeware at bargain prices. I have cupcake cases from ASDA and have reused them loads and get perfect cupcakes every time. You dont even need to grease them!

    I've never used cases for muffins, I do them straight in the muffin tray. But if I do have cases, I'd put them into the muffin tray. Otherwise, the muffin would spread and it just wouldn't be right. I did try double cases once, but it still wasn't right. A good muffin is a wet, barely mixed mix.

    Having said that, my muffin tray came with me from NZ, and maybe it isn't just standard kit in this country.
