sorry if this has been done & i guess to an extent it has in previous budget cooking threads but I am searching for some inspiration for cheap meal ideas & the previous threads seem to consist of a lot of more hearty recipes
We are a family of 5 (ish - 2 adults & 3 children) and we are on a budget (though not really sure what that is atm - trying to establish a realistic one)
Usually through the summer we'll have things like chicken & salad, hm beef burgers etc etc - we eat a lot of salad, potato salad, pasta & usually aim to throw in a meat/veggie main thing with that - but we are open to many ideas

Cottage cheese stretches well on baked spuds with salad.
Quiche can be made very cheaply and is very filling, or add spuds for a frittata. This can be eaten cold too.
Salads can be sretched by grating carrots (cheap) and adding kidney beans or chickpeas etc.
Tuna pasta.
HM coleslaw.
Ploughmans.
Rice salad with left over chicken or tuna/fish etc.
Couscous is very cheap and we add mince lamb and veggies to ours, so a complete meal.
Baked Spuds and salad.
Prawns are light and can go quite far.
Pizza and salad.
Spagbol & salad.

Quiche and tarts go down well here - I make up a batch of pastry that will do 3 quiche/tart cases, divide it up and freeze it. I then make quiche with whatever veg need using up.
Otherwise we also eat lots of salady type things - and don't forget with less cooking you save money on your fuel bills too!0 -
