CARBONARA recipes & questions

Does anyone please have a budget friendly spaghetti caronara recipe that they could share with me. ALl the ones on the net call for loads of cream and posh cheeses and spices
Ie eaten this at my friends before and it wasnt as complicated for her to make. Id give her a call but shes moved abraod now

    Hi narabanekeater :hello:

    This is my favourite one - I actually made it last night for me and BF. :D It makes 5-6 good sized portions.

    Ingredients:

    350-400g spaghetti
    3 eggs (2 + one yolk, beaten)
    110g parmesan cheese, grated
    2 garlic cloves, finely chopped
    4-5 rashers of bacon
    1tbsp olive oil


    Method:
    1. Boil your spaghetti according to instructions
    2. Beat 2 eggs, then add yolk of third and whisk. Add grated parmesan to the egg mixture.
    3. Fry off your bacon, when it is almost cooked add in your chopped garlic.
    4. Drain spaghetti (keep 50ml of the pasta water and add to the egg mixture to heat it a little)
    5. Add the spaghetti to the bacon and garlic, mix it through well.
    6. Take the spaghetti and bacon off the heat and pour over the eggy cheesey mixture and mix it through really well, making sure that it coats the pasta. Do it for about a minute.
    7. Seve and enjoy! ;)
    The cost of this is 64p or 76p per person (depending on how big a portion you serve) and about £3.80 in total for all portions!! With my hubby he takes about twice the size of portion that a normal person does, so this dinner doesn't last as long in our house unless I am strict and put it in tupperware containers straight away as I serve it!

    Anyway, I hope it's useful. I still have loads of it in my fridge from last night so I am having it for lunch today - yum! :j

    I was thinking aboout making some for my DD would it freeze o.k. in a tuppaware box, as she could use it when she got to work.It looks delicious

    1 egg yolk
    1 tbsp parmesan plus extra for the end
    75g pancetta or bacon

    Fry the bacon (its extra yummy if you deglaze the pan with a bit of wine but not essential). Whisk the egg yolk with the cheese and stir quickly through the hot, drained pasta, mix in bacon. Sprinkle with extra parmesan and a grate of nutmeg if you have one.

    eta lots of butter too tossed in with the eggs and cheese

    Why skimp on ingredients for something as pure & simple as carbonara?

    Use the best pasta, best eggs, best cheese and best guiancale or pancetta, but make it stretch twice as far. You will get far more enjoyment rather than using cheddar cheese and garlic powder, which sounds about the most disgusting rendition possible.

    Hey JackieO,

    I haven't tried to freeze it yet (it never survives that long!) but I think it would be okay. Might be an idea to loosen it up with a tiny bit of milk when you defrost it? Not sure, will try and report back if hubby ever stops polishing the lot off straight out of the pan!!!

    The only problem with freezing it, is when you come to reheat it the eggs will scramble with the temperature,as with a carbonara you want the egg mix to gently coat and not overcook,thats why you take it off the heat.
    but if you don't mind that will happen then go ahead.

    Also i often use the gammon steaks from Lidl in mine,cut into cubes and fried, one pack of 2 does 5 of us,i also add some chopped parsley and occasionally a drop of wine to de glaze the pan if i have
    any to use up like rachbc

    I'm afraid I agree, if you go away from the principle ingedients then it ends up being an entirely different dish. If you want economy then buy a jar of carbonara sauce from Lidl. It won't taste anything like authentic but it's cheap.

    I just make up a cheese sauce in the normal way (we like cheddar cheese in ours), fry bacon bits (bit of onion and mushroom is nice if you have some) cook pasta off. Drain pasta, toss bacons bits etc in pour over sauce and stir. Dead cheap, quick and filling.

    Have been know to just do the cheese sauce with pasta and its one of my girls favorite teas:)
