Quitting job while remortgaging

Hi
Looking at remortgaging at the mo. My partner is just about to leave his job to expand his currently part-time self employed company. I am currently making him wait while we have remortgaged as i believe they will be writing out to his current employer to get confirmation of employment and wage etc.
I now this sounds funny but there isn't any problem with us paying. The mortgage is about 45%LTV at £60k. My wage is £25k and when self employed my partner will be taking £15k wage while building the company up.
My question is when we have a confirmed mortgage offer does that mean they have done all there checking or do we have to wait to the day the money moves over?
i am not sure if i should be asking for a joint mortgage but based on my wage only to stop any problems?

Hi, when the credit crunch was at its peak I did hear of a few instances where the mortgage provider did indeed recheck employment details and do new credit checks as late as the last couple of days before completion and in one case pulled the mortgage the day before completion due to a new missed payment on their credit file.0
