Tuna pasta recipe please URGENT

My DH is on nights tonight and i want to do him something other than sandwiches. He works outdoors and can't warm anything up. I thought about tuna pasta as i have these in the cupboard. What can i add other than salad as he always complains that salad goes soggy. It needs to be quick to prepare also as he sets off soon. Thanks in advance.

    I hope this isn't too late for you. This is a favourite lunch that my children take to school:

    Fry chopped onion, garlic and green pepper in a little olive oil. Then add baby tomatoes and tinned sweetcorn. Finally add black pepper and your choice of herbs for extra flavour.

    Cook the pasta - I usually use fusilli (the twisty one)

    Drain pasta and mix in other ingredients and some tinned tuna or cooked chicken.

    Serve either hot or cold....if having it cold you can add mayonaise too.

    Thanks for your reply. I have already done it but my concoction was actually pretty similar to yours. I will definitely try this another day as i do think he gets fed up of sandwiches!! Thanks again for your reply.

    From the Annabel Karmel "Feeding your baby and toddler" cookbook - but not just for babies!!

    7oz can of tuna in oil
    1 garlic clove crushed
    1 small onion sliced
    6oz dried pasta
    400g can of chopped toms
    1tbsp tomato puree
    4oz frozen sweetcorn
    1oz parmesan

    use the oil from the can of tuna and saute the garlic and onion in it until soft. Add the toms, puree to the pan and cook for 10 mins add salt and pepper to taste. Add sweetcorn and simmer for 5 mins, flake tuna and add to the sauce mix.

    spoon into dish, top with parmesan and grill for 2-3 mins until bubbling and golden.

    Add cooked and drained pasta to the sauce/tuna mix.

    Loads of good recipes in this book - one of my favourite!
