    I make grilled veg a lot-courgettes/toms/onions/mushrooms/carrots/peppers etc and drizzle with olive oil, add garlic and bake in the oven.

    Also, add them to spagbol or chili or even chop up DEAD small and add to cottaghe pie so the kids dont know. Your way sounds gorgeous! Will try that!

    I do it with onions, aubergines, peppers, mushrooms etc, but had never tried courgettes. Somehow expected em to be like hot cucumbers, but they werent, they were fab. Hope we get some more from our crop :T

    They grow like mad usually so you should be ok!

    They are great on skewers as well over the BBQ with chicken or anything like that.

    I am currently wearing maxi dress I bought in Florida. I love it

    I'm shopping tomorrow (may have mentioned that before...) so will be looking out for a nice maxi;) Perhaps not that one at almost £90:eek: PLus that much red would take a REALLY good day to carry off

    We likr them grated, zapped in the micro for a couple of minutes then layered into a baking dish with parmesan and baked until golden. LUSH;)

    Ooooh if you're doing grilled/roasted veg, do try butternut too. It's my absolutely all-time favourite veg. It goes so sweet when roasted.

    Plus you can make a lovely snack with roasted veg, topped with a few rounds of goat's cheese and popped under the grill so that the cheese softens just a tad.

    And YES.............a meet SOOOOOOOOOOOOOOOON please!!
