Beef Jerky

Hello
After watching Ray Mears on the telly I decided to try to make some beef jerky.
I marinated stips of beef in a mixture of soy sauce, Worcestershire sauce and chilies etc overnight then gave them a good sprinkling of salt and dried them in the oven on the lowest heat for around six hours.
The finished product looks just like the stuff you can buy in Americe and tastes great but does anyone know how long I should be able to store this without refridgeration? I know that as the moisture has been removed it will last longer than normal meat.

Hi Eranou ,
I would try freezing a small portion - to see how that goes. Really it should keep for quite a while if kept air tight (i would imagine anyway!). Have a read through this thread on Beef jerky for answers, and I'll merge it later once you have more input
