help me decide what to cook tonight

Ok

We are off away tomorrow, and as a result I dont really want to buy any more provisions, so.... this is what I have in- inspire me

2x cod fillets ( never cooked them the other day in the end, I have the fear!)
half bag oven chips
bag pasta
bag couscous ( OH not keen on this really lol )
Loads of mushrooms
Carrots
2x red peppers
2x frozen fish portions (glazed hake)

All the usual storecupboard gear

Help me out im at a dead end here! :confused:

    With the cod and chips you could serve a red pepper mushroom sauce. I know it sounds weird, but it's really nice and gets you towards your five a day :-)

    Just fry up red pepper and mushrooms, add pepper, salt and what other spices you fancy. Add a little bit of vegetable broth (or bouillon in hot water) and add, if you have, cream or creme fraiche to taste. Otherwise you might want to think about adding tomato paste for flavour...

    Also, serve with grated carrots on the side :-) If you have, add one grated apple, oil, a bit of lemon juice and a teaspoon of sugar, mix it all up, makes delicious salad...
