A profusion of produce... Help!

I have just been given:T , by a neighbour returning a favour, 25 eggs, 2 Lollo Rosso lettuces, a large Coz lettuce, 14 tomatoes and a small knobbly green squash:eek: . They all need to be used up quite quickly and there are only two of us:eek: :eek: . Has anyone any ideas how to use it up :think: (and ideally making it last as long as possible). I'm pretty hopeless with salad stuff and I really don't want it to go to waste.
I could make it better myself at home. All I need is a small aubergine...
I moved to Liverpool for a better life.
And goodness, it's turned out to be better and busier!

I'm sure you can use lettuce in soup, I know it sounds weird but am sure I've seen a recipe. I'll look in the morning when more awake. As for the eggs and squash, why not try quiches or fritatas? Eggs can be frozen - beat them together, add a bit of salt and label them in containers - can portion them out if needed.
Tomatoes can be used for all sorts, but tinned tomatoes are so cheap I'd be tempted to use them with the lettuce and whatever else you have in to make some kind of salad for the next couple of days.
Lettuce can also be used for soup, and hungry rabbits.0 -
